Mayonnaise with ELEONES Early Harvest EVOO

Ingredients:

1 cup (235ml) ELEONES Organic Early harvest Extra Virgin Olive Oil
1 egg
¼ tsp (1,25ml) sugar
¼ tsp (1,25ml) salt
1 tsp (5ml) vinegar
1 tsp (5ml) mustard
1/8 cup (30ml) lemon juice

Execution:

Use a suitable bowl to mix gradually all the ingredients together. We use our food processor.

Add the egg, 1 tsp (5 ml) of ELEONES Early Harvest EVOO, the sugar, the salt, the mustard and the vinegar into the bowl of your food processor and mix together.

While the food processor is on slowly and gradually add the rest of the ELEONES Early Harvest EVOO. After adding the olive oil add slowly and gradually the lemon juice.

Leave the food processor on till the mix becomes creamy.

Your mayonnaise is ready. As we have specified at the introduction of our recipes, you might find the taste of olive oil very strong.
