ELEONES Early Harvest Extra Virgin Olive Oil
The ELEONES Early Harvest HPEVOO (High Phenolic Extra Virgin Olive Oil) is the first olive oil of the year. Halkidiki is located in northern Greece where, because of local climatic conditions and the variety of olives grown there, it has the privilege of producing the first olive oil of the year before any other region of Greece.
So the ELEONES Early Harvest HPEVOO is really the first available extra virgin olive oil of each year’s Greek olive harvest.
How it is produced
The ELEONES Early Harvest HPEVOO is hand picked from olive trees of the Hondrolia variety of Halkidiki.
The Hondrolia is cultivated mainly in the Halkidiki peninsula. The variety is productive and resistant to cold. It is the most large-fruited variety of the Greek olive varieties with a ratio of flesh to core of 7-10:1 and sizes ranging from 120 to 140 olives per kilo.
The Hondrolia of Halkidiki has dual use, producing good quality edible olives and olive oil production (oil yield: 14-20%). The fruit is known as Green Olive of Halkidiki and is one of the most recognized olives in many countries because of its large size.
The trees selected for the creation of the ELEONES Early Harvest are only the best and healthiest from the selected groves. The olives used must be unripe green and still on the tree. Olives that have fallen to the ground are not used. The harvest takes place in mid September each year and lasts for a couple of weeks.
The olives are collected exclusively by hand so as not to injure the olives during harvesting and certainly not by beating the tree with poles as is common elsewhere. This collection technique may be a time consuming process, but it is the only way to ensure the highest quality product.
After harvest the olives are placed into special crates designed to prevent damage to the olives. Then the leaves and debris are immediately removed so there is nothing in each crate except the olives.
The olives are taken to the mill for pressing hours after harvesting. After the pressing is completed the extracted olive oil is stored in special stainless steel tanks till it is bottled.
When the day comes that the ELEONES Early Harvest HPEVOO is to be bottled, the oil is filtered one last time to remove any natural sediment that occurs during the product’s settling period in the tank.
The bottling process of ELEONES Early Harvest HPEVOO is completed under very stringent quality control at all stages of the process according to international standards.
The ELEONES Early Harvest HPEVOO is tested by an International Olive Council certified laboratory. It is also tested by Nuclear Magnetic Resonance Spectroscopy (NMR), a new technique that shows the contents of Oleocanthal and Oleacein as well as other phenols. This is the reason why ELEONES Early Harvest belongs to the category of High Phenolic Extra Virgin Olive Oil.
ELEONES received the silver award at the first ever international competition for health and nutrition for its content in total phenols and according to EU regulation 432/2012 can claim that “ELEONES Early Harvest belongs to the oil category that protect the blood lipids from oxidative stress”. The limited time available to collect the unripe olives, prevents the production of large quantities of the ELEONES Early Harvest HPEVOO and no additional production can be made during the course of each year. The ELEONES Early Harvest HPEVOO is a limited availability product that consumers can find in selected food stores for a short period each year.
The price of the ELEONES Early Harvest HPEVOO differs from that of other brands for the following reasons:
- Use of only olives derived from olive groves of Halkidiki.
- Exclusively hand picking the olives is more time consuming and thus more expensive.
- Small yield due to the fact that the olives are collected unripe and thus have relatively low oil content.
But all these factors combine to make the ELEONES Early Harvest HPEVOO truly a unique olive oil that only a few can enjoy.
The ELEONES Early Harvest is rich in nutrients and all its features are overflowing with youth.
Colour: Shades of bright green to bright greenish yellow. The bright green comes from the chlorophyll contained in unripe olives, which is also rich in natural antioxidants. Over time, the bright green becomes a bright greenish yellow.
Aroma: Fresh olives, rich, fruity, spicy and enduring. These characteristics are stronger the fresher the product is when consumed.
Taste: Thin and pleasant fruity taste with a distinctive, mildly bitter aftertaste. These characteristics are stronger the fresher the product is when consumed.
Appearance: Cloudy at first, upon pressing, indicative of natural processing conditions used in the olive oil mill. The initial turbidity due to the olive pulp disappears leaving the oil perfectly clear from approximately two months after pressing.

Another important feature of the ELEONES Early Harvest HPEVOO is the long life of the product. Most early harvest olive oils have a shelf life of 9-10 months. The ELEONES Early Harvest HPEVOO has lifetime up to 18 months. This is because of the high levels of antioxidants contained in the unripe olives of the Hondrolia of Halkidiki variety. So the ELEONES Early Harvest HPEVOO delays the oxidation while maintaining its distinctive flavour for longer.
Where to use
Because of the unique characteristics of the ELEONES Early Harvest HPEVOO it is suggested that it is best enjoyed raw. You can use it for dipping with hot freshly baked bread, salads, to marinate meat, poultry and fish as well as for dressings.
